Elle est le lieu où l’on faisait fondre les métaux. Ce travail consistait à les transformer en liquide et à les couler dans des moules afin de fabriquer des cloches et différents autres objets.

Au XVIIe siècle, Jean SUCHET est choisi comme le mouleur en chef de cette fonderie. Durant cette période, Aix est assiégée et il doit fabriquer des canons pour protéger la ville. Cependant, il est incapable de répondre à la demande qui lui est faite dans un bref délai. On embauche alors un charpentier HAUSSIÈRE qui se propose d’en fabriquer plus rapidement en utilisant du bois cerclé de fer. Bien que HAUSSIÈRE fusse capable de répondre dans un délai plus court que Jean SUCHET, ses canons explosèrent dès leur premier tir.

Jusqu’au début du XIXe siècle, les descendants de Jean SUCHET respecteront la tradition familiale. S'il n'y a plus aujourd'hui de fonderie en centre-ville, à Aix et ailleurs, c'est qu'elles ont été logiquement déménagées hors des centres-villes pour éviter tout risque d'incendie.
